The Arepa Cabimera is much more than a traditional dish — it’s a symbol of identity for Cabimas and a culinary pride of Zulia. With its unique shape — fried, cut into squares, and topped with a generous mix of ingredients — it has earned a special place in the hearts (and taste buds) of everyone who tries it.
“The arepa is a gastronomic icon — the shared heritage that unites Venezuelans, Colombians, and Panamanians. [...] Especially in Cabimas, where the spherical version has a personality of its own. [...] The Arepa Cabimera, which apparently began being sold last century in the city’s popular tostadas, became famous for placing the filling on top rather than inside.”
Its origin can be traced back to the city’s popular tostadas, but it reached its highest expression in the hands of characters like Luisdímero José Rivas Alemán, better known as Mimo. For over 45 years, Mimo has kept the tradition alive, becoming a must-try reference for both locals and visitors.
The preparation itself is a show: a fried, crunchy base topped with layers of mayonnaise, fried cheese, fried ham, boiled egg, and thick sauces — never watered down. Although it doesn’t include meats or salads, the flavor and texture have made Mimo’s Tradicional a unique recipe that has gone beyond the borders of the city.
Beyond the plate, Mimo’s story is one of perseverance and dedication. From starting out as a young helper to building his own business, he has faced challenges, adapted his process, and preserved the essence that makes his product unique. His arepas have even inspired replicas in places like Miami — although, for him, the greatest reward is still the affection of his people.
